2 pounds lean ground beef
1 pound ground pork
2 cloves garlic, minced
1 large onion, diced
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon ground thyme
½ cup plain bread crumbs
2 eggs
1 pound bacon
2 (8-ounce) cans tomato sauce
Required equipment:
10-inch camp Dutch oven
Heavy-duty aluminum foil
Large mixing bowl
Preparation at camp:
Line Dutch oven with foil.
Mix all the ingredients, except bacon and tomato sauce, in a large bowl.
Knead beef mixture well and form into a loaf.
Lay half the bacon strips on top of the foil, covering an area the size of the loaf.
Set loaf on the bacon strips and arrange remaining bacon over the top of the loaf. Place lid on the oven. Be sure the loaf and bacon do not make contact with the inside surface of the lid.
Using 18 coals on the lid and 9 under the oven, bake for 1 hour, refreshing coals as needed.
Remove lid and pour tomato sauce over the loaf.
Replace lid and continue to cook for about 15 more minutes. Ensure that the internal temperature of the loaf is at least 160°F before serving.
